Ingredients

  • Ground Beef: Choose 80/20 ground beef for the best flavor and texture – the fat content helps keep the meat juicy and adds richness to the sauce
  • White Onion: Creates a flavorful base for the sauce and adds natural sweetness as it cooks down
  • Green Pepper: Adds fresh flavor and a slight crunch that complements the tender meat perfectly
  • Garlic: Fresh minced garlic infuses the dish with aromatic flavor – don’t skip this key ingredient!
  • Tomato Sauce and Paste: The combination creates a rich, thick sauce that clings to the meat instead of making your buns soggy
  • Worcestershire Sauce: Adds depth and umami flavor that makes these homemade burgers taste like they’ve been simmering all day
  • Chili-Garlic Sauce: Brings a subtle heat and complexity that elevates these Sloppy Joes above the typical recipe

Substitutions and Additions

  • Ground Turkey: Can be substituted for ground beef if you’re looking for a lighter option
  • Yellow Mustard: Works perfectly in place of Dijon mustard for a more traditional flavor
  • Bell Peppers: Try red or yellow bell peppers instead of green for a sweeter taste
  • Hot Sauce: Add a few dashes of your favorite hot sauce if you want to amp up the heat level

Instructions

Add olive oil to a large, high-sided skillet and warm over medium heat.

Add the diced onion, minced garlic, and green pepper. Season with salt and black pepper to taste, then cook for 4-5 minutes, stirring occasionally until the vegetables begin to soften and develop color.

Add your ground beef to the skillet, breaking it into small pieces with a spatula. Continue cooking until the meat is completely browned, about 5-6 minutes. Remove from heat and carefully drain excess fat from the skillet.

Return skillet to heat and stir in the tomato sauce, tomato paste, Worcestershire sauce, brown sugar, mustard, and chili garlic sauce.

Add additional salt and black pepper if desired. Stir well to combine all ingredients. Let the mixture simmer uncovered for 5-10 minutes until thoroughly heated.

While the meat mixture simmers, position the top oven rack in the second highest position and turn on your broiler. Place the hamburger buns on a large rimmed baking sheet, brush each surface with melted butter, and broil for a few minutes until golden brown, rotating once halfway through.

Remove the buns from the oven and spoon the hot meat mixture onto each bottom bun.

Top with the other half and serve right away with your favorite sides.

Recipe Tips

  • Break the meat into small, even pieces as it cooks for the best texture
  • Don’t skip draining the excess fat – this prevents your sauce from becoming greasy
  • Adjust the brown sugar to taste, starting with less and adding more if needed
  • Toast the buns to prevent them from getting soggy from the sauce

Serving Suggestions

These hearty sandwiches pair perfectly with classic sides like crispy French fries or potato chips. For a lighter option, serve alongside a fresh green salad or coleslaw. Add pickles on the side or right on top of your Sloppy Joe for extra tang and crunch.

Storage & Reheating

The meat mixture keeps well in an airtight container in the refrigerator for up to 3 days. It actually tastes even better the next day as the flavors continue to develop! To freeze, cool the mixture completely and store in a freezer-safe container for up to 3 months.

To reheat, warm the mixture in a skillet over medium heat or microwave in 30-second intervals until heated through. Add a splash of water or beef broth if the sauce seems too thick.

Recipe FAQ

Can I make Sloppy Joes ahead of time? Yes! The meat mixture can be made up to 2 days in advance and reheated when ready to serve. Just store it in an airtight container in the refrigerator.

Why are my Sloppy Joes too sweet? The brown sugar amount can be adjusted to taste. Start with 1 tablespoon and add more if needed. You can also balance the sweetness by adding a splash of apple cider vinegar.

Can I make this recipe in a slow cooker? Absolutely! Brown the meat and vegetables first, then transfer everything to a slow cooker and cook on low for 4-6 hours. The sauce will develop an even richer flavor.

How do I prevent my buns from getting soggy? Toasting the buns under the broiler creates a barrier that helps prevent them from getting soggy. You can also serve the meat mixture with a slotted spoon to leave excess sauce behind.
